You can just as easily use bacon instead of sausage, but I’m using sausage.
Normally I flatten the patties out thin so they fit well on the muffin, but I forgot to do it this time so at the end I just slice them in half
Get your sausage:
Set your stove to medium / med-high.
Get your drain plate ready and get your sausages cooking…
Once the sausage is done, move it to the drain plate
As you can see, I used a cast iron pan to cook the sausage, but you can use whatever pan you want. Afterwards, you can either clean the pan to cook the eggs, or cook the eggs in the sausage grease. I opted to cook in the grease.
Either way, you want to probably add oil. You want to fry the eggs in oil so they are easier to fold up without them sticking to the pan.
You want to cook each egg individually. Scramble an egg in a cup, add about a tablespoon of water, and a little salt and pepper.
Now fry the egg.
As the edges cook, fold/scrape the edges toward the center to keep it in a nice squarish shape to fit on the muffin
When its fully cooked, move it to a drain plate to let the oil drain.
Cook the rest of your eggs. One at a time. Moving them to drain on a drain plate.
Now that everything’s cooked, get your muffins, and some foil ready.
Like I said at the beginning, I forgot to flatten the sausage, so I split them.
Then add your egg and sausage to the muffin
You can either add the cheese now, or when you reheat it. I don’t think it matters, but to save time I’m adding it now.
Then just put it together, wrap it up, and move on to the next one.
Get them all made and wrapped. Put them in a freezer bag, and put them in the freezer.
To reheat them, you can either take them out of the foil, wrap it in a paper towel and throw it in the microwave for a few seconds or throw the whole foil wrapped muffin in an air fryer or toaster oven for like 10 mins or so. Or take it out of the foil, and open it up and air fry / toaster oven it to toast it up.
They won’t last forever in the freezer but should last a couple weeks.
